What If

 

"Children, our most precious resource, are the daily target of advertising that sells unhealthful fast-food by the truckload into urban and suburban communities. In so many cities, fresh and healthful foods are hard to find. What if we could begin to change that reality through education and practical knowledge? What if we could direct students, K-12, toward healthy living, when their young minds and eating habits are developing, using state-of-the-art, hands-on labs that make food and nutrition a bridge to the learning of science, technology, engineering, math, the languages, history, social sciences and the visual arts? What if the food produced by students in school could help save their generation from lifetime obesity, diabetes and heart diseases? What if school became a place that enabled children to begin, today, solving the global climate and environmental challenges of the 21st century?"
